Crayfish time

Now is the time for all the crayfish lovers in Sweden, the tradition of eating this small creatures goes way back in the old times when people in the darkest night put cages in to the lakes to catch this small but very tasty (kräftor) the right way to prepare them is in boiling havy saltet water with lots of fresh dill flowers for a few minutes and the cool them down in the cooking liquid.
To celebrate this feast it requires many beers and of course a lot of aquavite (snaps) of different flavors.


the table setting should be with napkins, bibs and silly hats and also nice lamps in special crayfish motives and not to forget all the crazy songs that goes with this special celebration.
